Hi I'm JJ Virgin of JJVirgin.com and I'm here today for About.com to share with you the veggies you should be avoiding on a low-carb diet. But I'm also going to share with you some great switches for that so I'm not just taking things out, I'm giving you some things too.And the first thing I want to clear up is corn, because corn is not a vegetable, it's a grain. And not only is it a grain, most of the time it's genetically modified and it's very high-glycemic, so I'm not even going to give you a change for this. I'm going to tell you just lose this one altogether, okay?The next one is the potato. Now I think of this like a lump of sugar, so I hope that's a clear enough metaphor.
Another thing you can do if you're a mashed potato fan is you can mash cauliflower instead. And you know what, you will not even notice the difference on that one.Now if you're looking for a little crispy, crunchy I'm going to share with you one of my favorite all-time recipes and that is with the brussel sprout. Now if you're thinking "I am not a fan," I want you to try this one and then tell me your results because I think I'm going to be able to convert you to be a total brussel sprouts fan. Here's what you do: cut your brussel sprouts up, quarter them so they're very tiny, and then sprinkle on some sea salt, and toss them in coconut oil, and roast them in the oven at 400 degrees, and you're going to need to turn them in about 20 minutes, and then roast them probably for another 20 minutes until they get crispy. And they are delicious. You will love them.So if you're looking for some chips, switch over to brussel sprouts. Now, one thing I'm going to share with you that you can use as a condiment are beets. And beets are amazing for your health, they're great for your liver, so I want you to think of beets as a nutritional condiment, okay? You're not going to eat this whole bowl, but shred some up and you can throw them on a salad or roast some up and put them in with your other roasted low carbohydrate vegetable choices like cauliflower and brussel sprouts.
Another root vegetable that I want you to think of as a condiment are carrots. Carrots again also are great for your liver, great for your eyes as we all know, but carrot juice, carrot soup, cooked carrots very high-glycemic. A couple of shredded carrots on your salad, a great option, or you can mix some carrots in with some celery, some red peppers, as a simple little way to get some great crunch, a great little snack, without a lot of carbs.
One of the things I love to do there is eat my celery, my red peppers, a little bit of carrots, with some guacamole dip and that's just a great, low-carb very satiating snack, if you're looking for something in the late afternoon.
