Hi I'm Gina Miller for About.com and today I'm making Zucchini pasta. I love zucchini because it's so versatile. It can be found fresh all year round at your local grocery store. Personally I like to buy the smaller zucchinis, they seem to have a best flavor.First heat a fry pan or wok over medium heat. Now, add the olive oil. Then add the garlic, and fry for about 15 to 20 seconds. Turn the heat to high.The key to making this a success is make sure the oil is hot. Add the zucchini strands and stir fry until soft.Add the salt, black pepper and red pepper flakes and stir. Sprinkle on the nutmeg just before removing the zucchini from the pan. Make sure you don't cook the zucchini too long – or they will get mushy. You want the zucchini to still have some crunch.You could also add minced fresh herbs. But don't add too many ingredients to this dish, its simplicity highlights the freshness of the vegetable. And that's how you make zucchini pasta. This might be a dish that you will enjoy even when you're not watching your carb intake.
