Hi, I'm Aubrey with About.com, and today I'm going to show a delicious low-carb frittata, using a recipe from lowcarbdiets.about.com.
A frittata is an egg dish made primarily on the stove. It is easier than an omelet and can be a vehicle for any meats, cheeses, or veggies you have around.For this recipe, you'll need:To begin, adjust the top broiler rack with your skillet on it, place it 4-6 inches from the top. Preheat the broiler. Chose a skillet that is oven safe, place it on the stove. Add a tablespoon of oil.
Now add any raw vegetables you want in your frittata, add the salt, pepper, and any herbs you like. Give the veggies a stir and while they are cooking, crack your eggs into a medium bowl. Use 12 eggs for a thick frittata. You can use fewer eggs if you are using a smaller skillet or prefer a thinner frittata.
Now add the salt, pepper, and 3 Tablespoons of half and half. You can substitute milk or water if you prefer a lower-calorie substitute. Whisk these ingredient together. Add about half of the cheese to the eggs. Add egg mixture to skillet.Cook the eggs for about 2 minutes on medium heat, scraping the sides and bottom with heat-resistant spatula. When the eggs are mostly cooked but still very wet, stop stirring. Continue cooking on stove for another minute so underside sets.
Sprinkle the remaining cheese on top. You can broil the frittata for 2-4 minutes until the top browns. Watch the frittata as the top browns. Remove skillet from oven and let it sit for about 5 minutes to finish cooking. Cut into wedges and serve.
