Gluten makes dough stretchy - that's one of the reasons it's hard to make a tasty gluten-free pizza dough. So to give your gluten-free baked goods that stretchy affect, try adding gums, such as guar gum or xantham gum. You'll only need about 1/8 to 1/4 tsp. per cup of flour.Generally speaking, when you're baking, it's best to use gluten-free flours in combination. You can use a store-bought gluten-free flour mix or make your own. As you can see, these mixes are typically made with three or four different gluten-free flours, such as garbanzo bean flour, rice flour.Now if you need to thicken sauces or gravies, rather than using a gluten-free flour, use corn starch or potato starch, both of which work just as well as a regular flour for the job.Because gluten is a protein, you might want to try adding some protein to your recipes such as replacing up to half a cup of water with a beaten egg or egg whites.
