Butter your muffin pan. I like to use a vegetable oil spray. Mix the dry ingredients together in a medium bowl: add the almond meal, baking powder, and salt. Now, add the wet ingredients and stir thoroughly (You don't want strings of egg white in there and you don't have to worry about "tunnels" when you are using almond meal).Pour the batter into the muffin tins (about 1/2 to 2/3 full).
