Hi I'm Gina Miller for About.com and today I'm making low-carb chocolate mousse based on the recipe from the About.com Low-Carb Diets site. This recipe is quick, easy and you'll be licking the spoon in no time at all.Here are the ingredients you'll need:OK, let's make some great low-carb chocolate mousse. First, In a large bowl, cover the chocolate with boiling water. Next, separate the eggs, putting the yolks in a small bowl, and the whites in another small bowl to be used later. Whisk the yolks with 1/2 cup of the liquid sugar substitute and the salt. Whisk until smooth and a light lemon color. Pour the water off the chocolate, setting aside a half cup. Add the rum and the remaining liquid sweetener to the half cup of water. Now, whisk the cocoa and espresso powder into the chocolate, followed by the rum mixture, then followed by the egg yolk mixture.Next, whisk or beat the egg whites with cream of tartar until soft peaks form. Then whisk about a third of it into the chocolate mixture, and then fold the rest in. Finally, whip the cream with a couple of drops of liquid seeetener, and the vanilla, until soft peaks form. Fold half into the chocolate mixture. To serve spoon into individual glasses and chill.
