Hi, I am Kari Britton, an RN, here today with About.com Health to share what to eat after phase 1 on the South Beach diet.Usually at about two weeks after starting the diet, you can add carbohydrates, slowly and carefully back into your diet. Weight loss slows to a about 1-2 pounds per week. This is a time when you can decide how much and what types of carbohydrates you can eat and still feel good and lose weight.Dr. Agatston recommends first adding one daily serving of a carb previously forbidden. Try a low glycemic fruit such as berries and monitor your body's response, particularly in regards to carb cravings. If you feel no major changes, then add another, like a serving of a whole grains, and continue in the same way.If at any point you get a negative reaction, try a different food, with a lower glycemic index.
