How to Make Peanut-Free Chocolate Sun Butter Cup

Hi, I'm Ilyse Schapiro, pediatric dietician and nutritionist, and I'm here for About.com to show you a great peanut-free recipe. There are so many great peanut-free solutions out there, and today I'm going to show you how to make my chocolate, sun-butter cups. To make the sunflower cups, you can starts with twelve paper muffins tins, a twelve-ounce package of chocolate chips, and I'm going to make sure that the chocolate chips are from a nut-free facility. Next you need one cup of sun butter, and a half a cup of powdered sugar.  So you're going to put half the chocolate chips in a microwave-safe bowl and put it in the microwave to melt for about two to three minutes.  Once it's melted in the microwave, you're going to spoon it into each muffin cup and lightly cover the bottom. Next you're going to mix the sun butter, and the powdered sugar.  The mixture may be a little stiff - this is completely normal.  Next we're going to put this in the microwave to melt it.  When it comes out, you're going to beat it with beaters, make sure it's nice and soft.  Next you're going to put these in the refrigerator to cool for about an hour. 
Next you're going to spoon the sun nut butter mixture, and put it onto the muffin cups that have just come out of the refrigerator. Next we're going to melt the second half of the chocolate chips to put on top of the sun butter cups.  So after you put the chocolate on top of the sun butter cups, you're going to put them back into the refrigerator to set, once they're all cool, all you have to do is enjoy.  So there you have it – my chocolate sun butter cups. Peanut-free, rich in B vitamins and vitamin E and absolutely delicious.
