Hi, I'm Stephanie Gallagher for About.com, and today I'll show you how to make high-protein peanut butter balls from our Low Carb Diets site.

Ingredients for Peanut Butter Protein Balls:

1 cup sugar-free peanut butter (it can be creamy or crunchy)
About 1-1/3 cups whey protein powder, any flavor - I happen to be using chocolate and most are low carb, but check to be sure
1 tsp. vanilla
1/4 cup artificial sweetener (or more or less to taste)
chopped almonds and/or unsweetened coconut flakes (optional)
Peanut Butter to Protein Ratio Can Vary

Place the peanut butter, protein powder, vanilla and artificial sweetener in a mixing bowl, and beat with an electric mixer until smooth. Now, the ratio of peanut butter to protein powder can vary a lot with this recipe, and you may need to add more of one or the other, depending on how oily your peanut butter is. I've noticed that a lot of the natural, no-sugar-added peanut butters can be quite oily.

Roll Peanut Butter Protein Balls

Once the mixture is smooth and holds together like a dough, form it into balls about 1-inch in diameter, like this. The balls don't have to be the same size, because you're not baking them. Now if you want to make them a little more special, spread some chopped almonds and/or unsweetened coconut out on a plate, and roll the balls in each, like this.

Eat the peanut butter protein balls right away, or store in an airtight container in the refrigerator.
