Hi, I'm Nancy Newcomer - mom, cook & food blogger with www.NancyNewcomer.com.I'm here today for About.com to share some Ideas for Making Healthy Kid & Mom Friendly Breakfasts that appeal to everyone, so that you're not running around in the morning trying to make 2 different meals. First of all, think healthy. So often, we grab a bagel or a muffin and a couple hours later, a big carb bomb goes off, our blood sugar levels crash, and we're starving! The best way to start your day is with a balance of protein & carbs.Here are a few of my favorites.
1) Yogurt Parfait. I love yogurt with fruit, but not the “fruit at the bottom” kind that's loaded with extra sugar. Try the shift over to plain Greek yogurt. It's creamier and it tastes great. Put a little yogurt in a bowl, add your favorite fruit, then make another layer of yogurt and top with your favorite granola or some chopped nuts. The sweetness of the fruit and the granola balance out the tartness of the yogurt.
2) Breakfast Burrito. This is so easy. Just scramble up a few eggs, throw them in a warmed up tortilla or a wrap. Add a little salsa, maybe some cheese. I always love a little onion & bell pepper. Better yet, if you have leftover veggies from the night before, add those too. Use your imagination.3) Smoothie. Find a quality protein powder that is high in protein and low in carbs. Lots of powders out there are full of sugar, so make sure to check the labels. I do a dairy free shake in the morning with ice, coconut milk, berries, protein powder & chia seeds. Blend for about a minute and you're good to go!
4) Oatmeal. I recommend steel cut oats. Now they take longer to cook, but I have a trick for you. If you have a crockpot with a timer, set it up the night before, just like you do with your coffee maker. You'll wake up to the smell of fresh oatmeal! If you add a little cinnamon, your house will smell even better.
5) Egg Sandwich. Fry an egg and put it in between a couple of pieces of toast and add some cheese if you like. Make sure to use high quality, multigrain bread that's full of protein and don't forget to read the labels. This is a perfect on-the-go breakfast! One last tip and it's not a recipe.Be Organized. If you can prepare ANYTHING the night before, do it. Whether it's putting out the plates, measuring out the protein powder, or slicing fruit. It'll help your morning go smoother as you're all trying to get out the door.
