Hi I'm Ilyse Schapiro, and I'm here from About.com to show you how to make a great wheat-free recipe for your kids.  Just because your child has a wheat allergy doesn't mean you can't have fun and make them some of their favorite sweets.  So today I'm going to show you how to make this delicious banana-rice pudding. So to make banana rice pudding, first you need:So first you're going to combine the water, the rice, and the salt in a medium saucepan and bring this to a boil.  Once this comes to a boil you're going to reduce the heat and cover it.  We're going to let this simmer for about 45-50 minutes, until the liquid is fully absorbed.  So once the liquid is fully absorbed, next you're going to stir in the rice milk, the brown sugar, and the cinnamon, and you're going to bring this to a lively simmer, stirring occasionally for about ten minutes. Next you're going to mash two bananas in small bowl.  Now that it's the consistency of porridge, you're going to remove it from the heat.  Next you're going to stir in the mashed bananas and the vanilla. You're going to stir this up, next we're going to transfer this into a large bowl, next you're going to cover with plastic wrap, placing the plastic wrap directly on top of the rice pudding.  And you're going to put this into the refrigerator for about two hours.  So after it comes out of the refrigerator, you're going to uncover it, and you can top it with some sliced bananas, which are great for your kids – they're rich in potassium and fiber.  And sprinkle with a little bit of cinnamon if you would like.  So there you have it – a great wheat-free recipe for your kids, chock with brown rice and bananas, and absolutely delicious.  For more information on wheat-free sweets for your kids, please visit About.com.
